Ah, the smell of fresh baked scones! I know they aren't really scones but then they aren't biscuits either. The recipe did start out as plain and simple scones but of course I had to tweek it a bit. There is a reason Chris calls me a "culinary Dr. Frankenstein", in a good sense according to him. Yesterday I made a double batch of whole wheat scones, only to find them all gone by bedtime! So this morning I set out to make more. This time it was whole wheat, low-bush cranberry "scones"! Made a double batch, and half are already gone! I think I'll try dried cranberries and a touch of orange next time. Or maybe a little dark chocolate and toasted hazelnuts. Or blueberries... And last but not least crumbled sharp cheddar, parmesan, and a touch of garlic (think Red Lobster ish!) I'll have to let you know how they come out.
This afternoon still holds a jam making session. Mango jam, strawberry jam, and lemon curd! One of these days I will figure out how to post pictures and include them as well! Maybe even a recipe or two...
Now back to the baking... It will be so nice to have a stock of baked goods in the freezer for our return back home. They heat up so nicely in the toaster oven, and great with a cup of coffee, tea or even hot chocolate!
Proverbs 29:27 An unjust man is an abomination to the just: and he that is upright in the way is abomination to the wicked.
(We read this last night at Wednesday night prayer meeting and I was struck by how poignant it is for the times we are going through right now!)
